We recently arrived home from our trip out west and boy howdy did we have a good time. One of our most important and most pressing agenda items was a trip to Cafe Rio. Of all the inanimate objects in Las Vegas, Cafe Rio would have to be the one we miss the most.
Does this wacky, colorful art deco atmosphere seem familiar to anyone? Gotta love it!
Our dear friends, the Whipples, so willingly volunteered to take us to Cafe Rio. We love you Emma and Jake!
Just like old times, guys. You are the BEST!
Now let's get to the food. I would have to say that Cafe Rio's specialty is their sweet pork. If you go there, you must order the sweet pork. It is out of this world!
They have children size quesadillas and if you order a plain cheese kids' quesadilla it is FREE! Kids love them as you can see. Wilson's hand is just waiting to pounce.
My all-time favorite is the salad. It has everything one could dream of right here in this beautiful salad. It starts with their incredible homemade tortillas of massive size. Then it's layered with rice, your choice of beans(I always get black), a meat(sweet pork all the way, baby), romaine lettuce, cheese, guacamole, pico de gallo, tortilla chip strips, fresh cilantro, and finally a slice of lime on the side. My dressing of choice: the House dressing. It's a creamy, spicy, tex-mex version of ranch dressing. Yuuummmmmy! Love it all!
Here we have what Kaid and Brett call the *pimped out* Nachos Supreme. What more can I say except, they are really pimped out.
I think everyone enjoyed their food in a 3 Amigos sort of way. I felt a little desperation as I gobbled up my salad, knowing that it would be a long time before I ate at Cafe Rio again. Maybe I will make it my life goal to bring Cafe Rio to the good people of Texas! Wherever there is hunger--it's there, Whenever there are cravings, it's there...It is CAFE RIO!So if you are ever in Nevada or Utah, you must visit Cafe Rio. But don't forget to order the sweet pork.
Special thanks to Kaid Whipple for providing some of his skillfully taken photographs.

Comment #2...I am so happy that you have your blog updated. I was starting to get a little worried that you might be sick and/or tired or something :).
Anyway, I love how you said you "gobbled up" your salad. I think "relish" would be a better word...it took you 4 days to eat half of it. Of course, Emma ate the rest while mourning your departure on Tuesday afternoon!
Kaid has been singing, "Brett misses his nachos like Ron misses his club head; Big girls don't cry." I'm dying laughing right now...
We miss you guys like something terrible! It's been a hard week without you. We love you guys!!
Leah,
I think you are definitely right when you say "relish." That fits much better. I wish I would have thought of relish when I was writing it. Can I go back and edit? My brain is turning to mush.
Cafe Rio ALL THE WAY!! Man, just seeing your post makes my want to go right now. In fact, I think I just might go for lunch today :)...not to make you jealous or anything hahaha! It was so good seeing you at church and at the Whipple-mysters. You guys are great! Glad your safely home and back to the good old blogging!
OK, so I have to give a little update. I DID go to Cafe Rio today for lunch. I really just couldn't resist thanks to your post!!! :) And I'm still full from it haha!
Looks super yum, I have never been but have heard great things... maybe you should start a franchise in Dallas!
Hey! Give AZ some props -- we have Cafe Rio too. Now I need to go there for lunch. YUM.
I didn't know that AZ had a Cafe Rio! How exciting for you guys. Where is it? Or I guess when we come visit you guys you can take us there:-)
We LOVE LOVE LOVE Cafe Rio. That has been one of our biggest withdrawals by living in IL. I actually have the recipes to the dressing, the burritos, sweet pork, and others if you are interested. Don't you love the internet! Now that I read your post though, I think I know what is for dinner tommorow. YUM!!!!
Hola!! Geez, I'm trying to think of something else to say in spanish, but I think I forgot it all. Yikes, and I start Spanish 3 in two weeks, ha ha! Anyways, I love your guys blog...we miss you so much here in LV, but it was so fun to see you two weeks back!
Mmmmmm........we LOVE Cafe Rio too! I definitely took my 5 years in Provo for granted. One of Kyle's and my all time favorites - LOVE the pulled pork burritos! Let us know if you want partners in bringing it to Dallas, we'll happily join in on the business venture!
Okay, that last comment was actually from me - forgot to change the username! (Jenni is my sister-in-law who's house we're staying at right now!)
Wow--I had no idea how lucky I am that I have a standing Wednesday lunch appointment each week at the Cafe Rio in Provo. Welcome to the Promised Land!
Oh if only it were true! If only you would come visit us sometime. . . We would take you to Cafe Rio every day. ;p
I don't know how well you know the East Valley, but the one we go to is in Gilbert. Gilbert and Baseline if that means anything to you.
PS It's Maddy. For some reason I'm logged in as Dustin and I only just noticed.
we didn't get a chance to go while there, but have heard that it's the best. I guess we'll have to wait until you open it up down here, or 3 years until our next utah visit.
